Beer Can Chicken


Beer can chicken is an easy (and fun) way to grill chicken. Who doesn't love a recipe where you're encouraged to imbibe one of the ingredients before preparing it? The steam from the beer (or soda) keeps the chicken moist and delicious while the skin gets crispy! You can also grill to birds at the same time to save time and get a start on the next day's dinner—chicken quesadillas, chicken salad, stir fry, or whatever else you choose.

Ingredients

  • 1 can beer (or ginger ale)

  • olive oil

  • 2 bay leaves

  • seasoned salt (or spice rub of your choice), to taste

Serves 6

Directions

Heat grill to 350° or use rotisserie setting. Drink ¼ of the beer, and drop bay leaves into remaining beer. Rinse chicken and pat dry. Sprinkle inside of chicken with seasoned salt. Slide chicken onto beer can. Rub chicken with olive oil and coat with seasoned salt, getting some beneath the skin of the chicken. Place standing up on the grill and close the lid. Cook for about 1½ hours for a 5 pound chicken, or until thermometer registers 165°. You can place a disposable metal pan in the bottom of the grill to catch drippings. Remove from grill and let rest for a few minutes before carving.
