Meat loaf is simple, quick, and customizable. You can make it just the way you like it, or try a new variation every time you use this recipe. Toss some potatoes in the oven to bake at the same time for an easy oven meal.
1 lb ground beef
½ cup oatmeal (dry, uncooked)
½ cup milk
1 small onion, diced (or 1 tsp onion powder)
2 tsp Worcestershire sauce
1 tsp salt
¼. tsp dry mustard or ½ tsp spicy mustard
¼ tsp pepper
1 small clove garlic, crushed (or ½ tsp garlic powder)
Mix all ingredients together, place in 9x5 loaf pan. Bake at 350 degrees, uncovered, for about 1 hour. Serve with ketchup.
Add ½ cup finely chopped mushrooms or carrots to the meat mixture.
Substitute red wine for the milk.
Place sliced cheese on top of cooked meatloaf. Let sit in oven for one minute to melt.
Meat Loaf Roll: Spread meat mixture into a square on a sheet of aluminum foil. Layer on sliced ham, sliced cheese, and chopped fresh or frozen (drained) broccoli or spinach. Roll up, using foil to lift as you go. Discard foil. Seal edges and ends and bake as above.
