Smash Burgers

Inspired by our friends at Hamlet & Ghost, we tried making very simple smash burgers at home, and the results were awesome, even without a side of duck fat fries. Our resident food critic and master chef Matt gave this recipe his stamp of approval, so you know it's a winner.


Ingredients

  • 1 lb ground beef

  • salt and pepper or steak seasoning

  • 4 slices of cheese of your choosing (we recommend a sharp cheddar)

  • butter

  • brioche rolls

Directions

Divide one pound ground beef into 4 equal sections. Gently shape into balls (don't squeeze too tight!). Heat griddle or cast iron pan over med. high heat. Add meat and press down with spatula to form patties. Season with coarse salt and pepper or steak seasoning. After first side has a nice sear, flip burgers. When second side is almost done, add a slice of cheese to each patty. Butter a brioche roll generously, and toast on your griddle or a second pan. Assemble with your choice of condiments.
